Our beautiful home Tuguegarao City has very distinct noodle which is very popular today. The famous “Pansit Batil-Patong of Tuguegarao”, “Pansit Tuguegarao” “Pansi Ibanag” or “Batil Patong” is now commonly known to Filipino people as one of the most sumptuous noodle dishes in and outside of Tuguegarao.
This noodle dish is now known, throughout the province of Cagayan, the whole of Cagayan Valley region, in other Northern Luzon provinces and has been brought well-known throughout Philippines because it was been featured several times in some live cooking shows or pre-taped magazine TV shows in the national TV stations, in radio stations, in newspapers and national cooking, health and lifestyle magazines.
The Tuguegarao Pansit is called Batil-Patong. Batil literally means “beat the egg” or “scrambled egg” in English and Patong means “put it on the top” or “placed on top”. The main ingredients are pansit miki Tuguegarao, pork, cara beef, lechon and chicharon bits, togue with an egg on top with a side dish hot creamy sauce of an egg (scrambled egg soup). The locals usually produce freshly made pansit miki every day, though the miki is not just made in Tuguegarao, it is also made in other neighboring towns. It goes very well with a pamasingo’- sauce mix of freshly sliced onions, vinegar, toyo and lots of calamansi juice.
In Tuguegarao, if you enter in a Panciteria, you will see a hanged or nailed placard in the walls where the written list of different menu of Pansit Batil Patong, where you can choose and order based on the serving plate you can consume, the toppings and the price; “Regular (50 pesos),” “Super (60 pesos),” “Mega (70 pesos),” and “Special (80 pesos).” It is a very affordable meal and if you finish one bowl of it you’ll be guaranteed full for 5 hours or a night.
The city’s popular Pancit Batil-Patong Panciteria’s are the Nangs, Boks, Budyoks, Dating Doon, Tuddao’s, Jaren’s, Narag’s, Darauay’s, Macapagal Highway, Joemar’s, Amigo’s, Triangle, Gretchens, and more. Ask any person in Tuguegarao or people who visited the city and ate the famous Pansit Ibanag, they would attest how deliciously this noodle dish was cooked by the noble Ibanags and most of them – the pansit lovers have their own favorite Pansiterias. Don’t worry, most of Tuguegarao City’s Panciteria cook’s the same pansit recipe and all of them are in some point the same in taste, though they differ in place, the ambiance, cleanliness and goodness of service.

I miss Tuguegarao Pansit… after reading your write up, it made me reminisce the good times that I with my classmates and friends eat pansit batil patung and memories we had in our dear hometowm…
I’ve started my own Batil Patong panciteria in Aparri–a town more than a hundred kilometers to the north of Tuguegarao. It’s amazing how the folks liked the way this non-native pancit tastes. I hope it blooms because my aim is to introduce this new type of dish in my own hometown.
